SPARKLING
Our philosophy is to be diligent in nurturing our grapes to produce the best possible fruit, then gently handling the grapes with minimalist intervention at every stage of the process. We make all our Sparklings using traditional French techniques including a long time on lees minimum four years.
2015 Chardonnay Pinot Noir
This 2015 vintage is our newest offering from a lineage of trophy winning vintages..
It is a methode traditionelle sparkling blended from handpicked chardonnay (50%) and pinot noir (50%) grapes grown at Parkside during the 2015 vintage season. Aged on lees for at least 48 months it was disgorged in October 2019.
Flavours of citrus, baked apple and hazlenut merge with a creamy, brioche texture. Chardonnay offers purity and length to the palate while lingering pinot flavours carry to a long, brut finish. This classic aperitif Sparkling shows finesse, elegance and a persistent creamy bead.
2013 Chardonnay Pinot Noir
This methode traditionelle Sparkling is blended from handpicked Chardonnay (85%) and Pinot Noir (15%) grapes grown in our vineyard at Parkside. A fine bead of lemon, rosewater and brioche flavours tickle your palate then continue to open up in your glass as it carries to a long, brut finish. Aged on lees for 48 months it is a classic bubbly to begin your meal and celebrate any occaision.

2018 Sparkling Rosé
Its our youngest, newest and most exciting vintage Sparkling - a hugely popular drop at the 2018 Macedon Ranges Wine and Food Festival in 2019. It is a methode traditionelle sparkling from handpicked Parkside grapes aged on lees for 15 months and disgorged in October 2019.
With a delicate pink hue, strawberry compote characters fill the nose as the palate bursts with fine red berry flavours and a perfect match of acidity and dosage. This sparkling is light bodied but rich and intense. Its finish is long and dry and refreshingly harmonised. With chardonnay crispness on the finish, the lingering flavours are all pinot.
